I'm a noobie to Gimp, when I 'Export AS..' I have to manually change the file suffix if I want to save as a different file format - is this normal? There is no selection list to choose the file format. I'm using v2.10.36 on a Mac

Does that mean you do not have this drop down menu ?

   

If that is the case, report it as a bug to https://gitlab.gnome.org/GNOME/gimp/-/issues giving version of your MacOS as well as Gimp 2.10.36
edit: To be honest, I never bother with that drop-down menu and usually type in the format extension manually.

Edit/Preferences/Image Import & Export allows you to set the default export file type, however, this default is currently only used when you have created a new image or are editing an xcf image. I submitted a merge request some time ago to allow you to select that this 'default' file extension is used every time you use Export As. This is useful if, for example you have scanned a number of images in tif format but want to save processed results in jpg - currently a pain. Unfortunately the MR keeps getting bumped to later and later milestones  Sad
