Gimp version: Don't know yet
Gimp shows me mostly only numbers in boxes instead of the buttons, everything is affected and there is nothing i know of i could do. I tried reinstalling it (v 2.10.34) multiple times using different sources but i have no idea what the problem might be. Anybody seen this before and knows whats going on? (I‘ve got an old macbook pro retina mid 2014 running big sur (11.5.2))

Looks like a ofnt that has no support for ASCII characters.
Reinstalling rarely fixes things, better start with a fresh profile.

What do you get if you open Edit -> Preferences -> Interface -> Language
Is there a drop down list of languages ? If there is, what happens if you choose a different language other than System ? If it is a list of those code symbols, it is a bit of guess and try.

I can access it, but it won‘t change a single thing, i tried multiple languages and tried specifically the 16th-19th option since that should be engl. but nothing works...

Can you tell us more about those "sources", which ones?

First of all, my folder is called 2.0 instead of 2.10, is that normal? My Gimp version is definitively 2.10...
Renaming the folder to .disabled (i followed the websites instruction precisely) just creates upon reopening another one that is even worse, it takes away the whole menu bar and changes some numbers into chinese characters. And whatever i do, once i rename the original folder, upon opening gimp it‘ll always create a new folder with just the empty font folder inside...
I‘m pretty sure tho, that you are right with the problem being some sort of a missing font/unsupported font...

The original ( https://www.gimp.org/downloads/) and a german website ( https://www.gimp24.de/gimp_download_mac.php), i‘m pretty sure its the exact same thing... i havent tried installing via torrent yet... i don‘t think that would make a difference tho...

Which one did you downloaded? The one for intel or Apple Silicon?
If your mac is from BEFORE 2020 or 2021 you should download the one for Intel
I'm pretty sure the one on the German website gimp24 is for Apple silicon as they offer only 1 link to download

No i tried twice the original, then i tried the german one once and kept on trying the original, but yeah its not about the download, thats fine i guess, it has smth to do with the system font...
