Between nodes I'd accidentally make the line slightly curved. When I try to shape it to be as straight as possible those annoying 2 extra squares show up at either side. Is there any way to undo it entirely to make it a normal line (while not having to redo the entire path of course)

Just erase the extra squares (tangent handles), by Ctrl-Shift-clicking them.
