Hopefully you have found how to get into single window mode Windows -> Single Window Mode
Normally you might use the Font Tool Options. Click in the font icon and a pop-up list appears.

Not the only way. You can add a Font dialogue Windows -> Dockable Dialogues -> Fonts

Pleased you found that. That is where you add extra fonts that only Gimp can use. Much better there than installing in Windows where a bad font can screw things up.
