I recall an old seam-carving application that showed the lines of pixels zig-zag-ing down, being deleted in real time, fascinating to watch, but I cannot remember the name of it

Liquid-rescale not the only seamcarving filter for Gimp. There is one in gmic.



...but only for shrinking.
