hello,
trying to try new fonts of existing text but when selecting new fonts in the side panel dialouge boxes the font is not modified.
Any help?

If you updated to MacOS bigsur it could be an unexpected side-effect (along with others)
With the text tool active
and
the on-canvas display active
it should go like this 1 minute demo(older Mac VM + Gimp 2.10)
