Is Gimp compatible with mac? OK, that's not really my question. Years ago the gimp programmer that makes it compatible with mac became MIA. When mac upgraded with macOS Sierra (version 10.12) Gimp suddenly had lots of bugs in it.
My question is, how is it now? Better? Worse? Same?

There were some fairly annoying bugs with BigSur that have been fixed lately and AFAIK there is now an "official" OSX release.

I downloaded gimp-2.10.30-x86_64.dmg.torrent. Now how do I install it? I keep clicking it but keep getting the message that there is no application to open the document

A bittorent is a method of transferring files where the source is spread over several servers, often peer-to-peer. Spreads the load but can be slow & sometimes can get stuck waiting for that last 1% of download.
What you downloaded was a small bittorent file which tells a bittorrent client, https://www.bittorrent.com/downloads/mac/ what to download.
What you need is use the button on the gimp.org site that says 'direct download' straight to a dmg file.

gimp-2.10.30-x86_64.dmg.torrent is a torrent file, you need a software for that, like https://transmissionbt.com/
once you have installed Transmision double click on this file gimp-2.10.30-x86_64.dmg.torrent this will ask some servers around the world who has gimp-2.10.30-x86_64.dmg then will connect you to them to download gimp-2.10.30-x86_64.dmg via Transmission
