I'm pretty newnew to Gimp and just learning. 
I'm pretty new to Gimp.

Is it possible to easily lay out text in a preset shape (cross)?
Is there anyway to easily lay out text in certain shapes (cross)??

The crucial bit there is 'easily' Inkscape is the tool where you can flow text into a shape.

Not impossible in Gimp, this only took a few minutes.

The essentials are.

1. Make a template (if required set up a Gimp grid to help). Cross shown, but for other shapes look at using a path.
2. Size the text block to the template.

Then it is up to you.

3. Manually add spaces to set the first character on a line.
4. End of lines require a carriage return (Enter) to break the line.
5. Any justification is manual, add spaces where required.

Not exactly what the OP wants, but just for interest, a brief description.

1. A (very) rough outline. Using the Paths tool make some straight paths. Hint - Hold the shift-key to start a new line.

2. Those straight lines pulled into curves. A couple of small paths added to fill in. 
Ofnuts text-along-path plugin can use those separate paths.

ok thanks. I'll play with it a little to see what i can come up with. Also installed Inkscape but couldn't understand the flowed text in setting up the shape. Any help with tutorials there would be greatly appreciated as well.

I dont know about tutorials for flowed text, you might want to check youtube.
EDIT: here is one and here is another

Start by making the shape. For a cross you might create a rectangle with the 'Rectangle Tool'.
Duplicate and rotate 90°.
That should give you a cross shape.

This shape is not a path yet, but two objects.
Select them both and go to the menu 'Path' and choose 'Union'.
Now its one path with 12 nodes.

For random text you can use the Lorem ipsum Extension.
Its under 'Extensions' -> 'Text' -> 'Lorem ipsum'.
Click apply and random text is generated.

Select both text and shape and go to 'Text' -> 'Flow into frame'.

This text is still editable with the Text Tool.

What im missing from this thread is what OP actually wants to achieve artistically.

Flowing text into a cross-shape is technically one thing, but what OP wants to express artistically can make all the difference regarding techniques.

Is this for a religious content, or a poem ?

Its nice to automate things, but sometimes that can also be limiting.
As rich pointed out at the beginning of the thread, you can arrange text without any scripts or filters.
Its just a matter of arranging text on various layers and positioning them with the Move Tool.
