I just downloaded Gimp to carry out a project. 
I would like to know if it is possible to create embossed lettering as in the examples photo and if so, how.

There is a filter for what you show us, write your text, then just go to Filters > Light and Shadow > Long Shadow...,
Play with the sliders to your liking: you can even do it in color.
