that is the more extreme option from before.
Edit -> Preferences -> Window Management click on Reset Saved Windows Positions to Default Values. OK that Restart Gimp.

Of course possible.
Gimp has 'hot' spots' at the junction of docks and window.
As with the tool options add a (say) brush tab the drag and drop down to the bottom of the dock. That will open a new dock. Takes a little practice so do not give up.
Once you have that, use the little left pointing arrow which brings up a menu for adding / removing etc.
