There is not a lot you can do. I use linux and a font manager to disable unwanted fonts. That of course is system wide and affects other applications, typically Web browsers. There might be a free / inexpensive Mac font manager.
Otherwise, you can tag fonts with a reference name see: https://docs.gimp.org/2.10/en/gimp-tagging.html
The name is filtered in the Fonts dock (but not the font tool options) This in a Mac Virtual Machine.
