That sounds like a strategy that will let you get whatever color eyes you need. I haven't tried it. I'm just a GIMP beginner.
Here's something I did that will work for some colors of eyes and seems easier.
1. Select the eyes (I used two ellipses and grew a bit and feathered a bit).
2. Open the Colors > Hue-Saturation tool.
3. Reduce saturation so the red is starting to disappear.
4. Play with hue to find a color, and play with saturation.
If you can't find a color you want using Hue, maybe this method won't work for you.
