Okay, looks like I got it.
It doesn't work like in the video, maybe due to the difference between the inkscape versions used (1.1 x 1.2)
The way it's working doesn't have much (or any particity), I was hoping it would be possible to adjust the colors as shown in the video.
In the image, colors with cmyk, fogra39 and fogra27 patterns.
