I cant get anything much like the original example or as nice as Ofnuts example.

Whatever method, do experiment with the brush dynamics. Pressure options no good for a mouse but velocity tapering works and try out Smooth Stroke as well. My guess is the original was done with a tablet and maybe a Vector application.
Just as example: the gih brush attached, Unzip and put in your brushes folder.
