Whenever I use the text tool, the point size defaults to 62.
How can I change that default to say 10 or 12?

Yes, I use 36 pix and Ubuntu font
Set the tools to how you want Gimp to start up. Set Text size and Font but do not forget other tools such as brush and brush size. Choose the tool you want to start with (I use the paint tool) Then you need to go into Edit -> Preferences -> Tool Options Untick Save tool options on exit and click on Save Tool Option Now Repeat the same for Input Devices. Looks like this https://i.imgur.com/hNZOQ0O.jpeg Want to change anything ? Repeat the procedure Edit. Just a thought, you might want to change the default image size / ppi as well. Edit -> Preferences -> Default Image

Change the size in the Tool Options dialog rather than in the dialog that pops up when you click on the canvas with the text tool. It should then stay to the value you set. This value will persist across GIMP sessions.

However, make sure that all you options in a the tools are decent. An alternative is to use a preset (see the 4 icons at the bottom to the tool options) |
