I dont know about tutorials for flowed text, you might want to check youtube.

Start by making the shape. For a cross you might create a rectangle with the 'Rectangle Tool'.
Duplicate and rotate 90°.
That should give you a cross shape.
This shape is not a path yet, but two objects.
Select them both and go to the menu 'Path' and choose 'Union'.
Now its one path with 12 nodes.
For random text you can use the Lorem ipsum Extension.
Its under 'Extensions' -> 'Text' -> 'Lorem ipsum'.
Click apply and random text is generated.
Select both text and shape and go to 'Text' -> 'Flow into frame'.
This text is still editable with the Text Tool.
